• Leafy chinese broccoli is also sold as gai lan in Chinese markets or kailan in Thai markets. If you can’t find it, substitute broccoli or bok choy.

• Wide rice noodles are sold fresh at some Asian markets, under the name chow fun at Chinese stores and sen yai at Thai stores. They can also be purchased dried online. If using dried noodles, they need to be soaked according to package directions before use.

• Kecap manis is a sweet, thick soy sauce used in Thai and Indonesian cooking. It is available at many grocery stores and online.

• Leftover tofu can be stored in an airtight container in the fridge for up to a week, but it loses its crispness quickly. Try it as a topping for our Kale Caesar Salad with Crispy Garlic Croutons or in a bowl of Bibimbap, or toss it with vegetables in a skillet for a quick stir-fry.
